Peanut Butter Blondies

If you love peanut butter you must try these peanut butter blondies. They're wonderful, and unique. 

Makes 4 dozen blondies

You will need

2 Cups all-purpose flour (we recommend King Arthur)
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup shortening
1 cup peanut butter
1 pound packed brown sugar
3 eggs
1 tablespoon vanilla extract (we recommend Nielsen-Massey)
1/4 cup chopped peanuts

Frosting
1 pound powdered sugar
1/2 cup peanut butter
1/2 cup shortening or butter
1 teaspoon salt
1/2 teaspoon vanilla extract
1/3 cup hot water

Heat oven to 350 degrees
Grease and flour two 13 x 9 baking pans

  1. In a medium size bowl, whisk the flour, baking powder, and salt together - set aside
  2. In a large bowl, beat shortening, peanut butter and brown sugar on medium / high speed for 3 minutes 
  3. Add in eggs and vanilla - beat 3 more minutes
  4. On a low speed, add in the flour mixture - then stir in the peanuts
  5. Divide batter between the 2 pans and bake at 350 degrees for 25 to 30 minutes or until lightly browned.  
  6. Frosting: Beat the powdered sugar, peanut butter, shorting, salt and vanilla. Slowly add in the hot water. Beat until smooth. 
  7. Spread the frosting over the blondies while still warm
