When I was a kid, I remember my mom baking a great Pineapple Upside Down Cake. It was always a special treat when I came home from school and could smell the aroma coming from the kitchen; I knew that our family would have an awesome dessert after dinner (of course the dinner was always amazing too - mom is an excellent cook).
Here is her recipe with a little twist - using Sweet Day Gourmet's Vanilla Bean Cupcake Mix instead of the traditional yellow cake.
Sweet Day Gourmet Vanilla Bean Cupcake Mix
(use directions in the box to make the cake . You'll need 2 eggs - 3/4 cup milk - 1/2 cup vegetable oil)

One 8oz can of pineapple slices
1/2 cup packed brown sugar
4 maraschino cherries (cut in 1/2)
2 tablespoons butter
Preheat Oven - 350 degrees
Drain juice from the pineapple slices can, but reserve 1 tablespoon of juice
Melt butter in an 8 inch round baking pan
Stir in brown sugar and the 1 tablespoon of pineapple juice
Arrange pineapples and cherries in the pan
Make the Vanilla Bean cake batter (follow recipe in the box)
Pour batter into the pan
Bake for 25-30 minutes, or until a toothpick comes out clean
Cool for 5 minutes, invert onto plate and serve warm
