As long as I can remember, my Thea Varonne has made the absolute greatest pies. She always baked a nice variety of homemade desserts when we would visit, but my all time favorite was, and still is, her Banana Cream Pie.
It was always a very special treat knowing that we'd be heading over to the Chakos house for dinner. I knew that there would be plenty of laughter, the meal would be wonderful, and the dessert... well - that was something to be cherished.
A few years ago my brother asked for her famous recipe, and she was kind enough to give it to him; well most of it - the banana cream filling. (We're still hoping to get the recipe for her pie crust). The only secret she revealed to us about the crust was that she used lard in it. So, if you have your pie crust ready to go (be sure to use lard) then you must try this incredible Banana Cream Filling!
You Will Need
1 cup sugar
pinch of salt
2 cups milk
2 1/2 tablespoons cornstarch
1 teaspoon vanilla extract
1 tablespoon butter
9 inch baked pie crust
2-3 Bananas, thinly sliced
Whipped cream (optional)
In a 2 quart saucepan, whisk together eggs, sugar, and salt until well combined.
Mix the cornstarch with the milk and add to egg mixture.
Heat on medium heat until the mixture starts to boil, stirring frequently.
Remove from heat, then stir in butter and vanilla extract.
When filling is cool, layer bananas and filling in the cooked pie crust.
Top with whipped cream and serve cold.
