 Ermine Frosting Recipe for Red Velvet

On Valentine's Day this year, Sweet Day Gourmet offered a special dozen red velvet cupcakes with traditional ermine frosting. We had an overwhelming response from our customers. They really liked the cupcakes, but they absolutely loved the frosting!

Ermine frosting is a very smooth, delicate, melts-in-your-mouth frosting. This phenomenal frosting (also called Butter Roux frosting) is the original frosting used for Red Velvet Cake. It's not quick and easy to make, but it's well worth the effort. 

Due to the complexity of making the ermine frosting, we can't create a dry mix for the product, but we certainly can give you the recipe!

This frosting needs to be refrigerated, like French and American buttercream. It doesn't stand up well to temperatures above 70 degrees

1 cup Whole Milk
3 Tablespoons All-Purpose Flour
A pinch of Salt
1 cup unsalted Butter
1 cup Granulated Sugar
1 tsp Vanilla


  1. Whisk flour into milk and place over medium heat in a small sauce pan
  2. Cook mixture, whisking frequently, until thickened
  3. Remove mixture from heat and whisk in salt
  4. Pour into a bowl and cover with plastic wrap to prevent crusting
  5. On medium - high speed, beat (cream) the butter and sugar until fluffy
  6. Add in vanilla, continue to mix
  7. Add the milk mixture (when it is slightly cooled) to the creamed butter, one tablespoon at a time on medium speed, continue until it's all added in

You should have an extremly fluffy, light and buttery frosting when you're done.
