Rice Custard with Strawberry Garnish Recipe

Something different for a refreshing spring dessert!

Looking for a unique recipe? This easy-to-make rice custard is delicious. If you like rice pudding, then you really should try this. It is rich and creamy with a hint of vanilla.

You will need:

  • 6 Eggs
  • 3 Cups 2% Milk
  • 1 Cup pure cane sugar 
  • 1 teaspoon Madagascar Bourbon Pure Vanilla Extract
  • 1/2 teaspoon Salt
  • 1 1/2 Cups cooked Long grain rice
  • Fresh Strawberries for garnish (cut into quarters)

Directions:

  1. Preheat oven to 350º
  2. Beat eggs with a fork in a 2 quart casserole dish
  3. Add in the milk, sugar, vanilla and salt 
  4. Blend all ingredients 
  5. Stir in rice
  6. Set casserole in pan of water
  7. Bake for 45 minutes, then stir
  8. Bake for another 30 minutes
  9. Let cool, scoop into individual cups
  10. Add strawberries as garnish and serve
