How to Keep Cakes from Falling

You’ve mixed all of your ingredients and popped your cupcakes in the oven. The house fills with warmth and a delectable aroma. After much anticipation, you open the oven expecting to see smooth, voluptuous cupcakes. Instead, you see craters. Your cupcakes have fallen. It has happened to us all at some point. Fortunately, there are a few things you can do to prevent this from happening.  

Stick with Exact Measurements

You’ve probably heard that baking is a science. It’s true. Measuring ingredients accurately is important in baking for several reasons. When measured correctly, the ingredients work together to produce beautifully baked cakes and cupcakes. If the ingredients aren’t correct, they don’t do their jobs quite as well, and this can cause your cupcakes to fall. Read recipes before you begin, and double-check your measurements before adding ingredients.

Make Sure the Oven Temperature is Correct

Proper oven temperature is essential when baking. Sometimes oven temperatures can be off. Even if you’ve set it correctly, the actual temperature may be different from what the oven reads. Consider purchasing an oven thermometer so that you can adjust your oven to the proper baking temperatures recipes call for.

Follow the Recipe Order

Just as with measurements, the order of ingredients matter. Again, read the recipe before you begin. Add ingredients and mix in the order it states. This effects how ingredients combine and can help prevent over or under mixing.

Use a Tester to Avoid Under Baking

Under baking your cake/cupcakes will cause them to fall. Proper temperature and time in the oven are essential. When your cake or cupcakes have baked for the minimum time a recipe calls for, check the it with a toothpick or cake tester to make sure it’s set. 

Account for Environment

Too much moisture can cause your cakes / cupcakes to rise too quickly and then fall. If you live in a humid climate, this can occur even when using exact ingredient measurements. A trick to prevent this problem is to store flour or baking mix in the freezer. This stops it from condensing and collecting extra moisture.
